CUCUMBER MELON POPSICLE

Ingredients

½ cup honey

¼ cup water

12 mint leaves

2 tablespoons lemon juice

4 cucumbers peeled

1 ¼ chunked melon.

Instructions

Begin by making a syrup. Boil the water, honey and lemon juice until it completely dissolves. Set it aside in a measuring cup to cool. Place

Slice up the cucumber into chunks. Place the cucumbers in the blender together with the melon, mint leaves and syrup. Blend until consistency is smooth and fully pureed. Pour blend into popsicle molds.

Freeze for one hour then add popsicle sticks. Freeze for another eight hours so that it can become solid.
