PUMPKIN PANCAKE RECIPE.

Have you ever woken up with an urge to eat something delicious and nutritious? Pumpkin pancakes are a fun and delicious way to kick-start your morning. They are worth getting out of bed for. They are good for any season but taste best on cold rainy mornings. Pumpkin is a highly nutritious dense food that is rich in vitamins and minerals but low in calories hence ensures that you start your day feeling healthy and energetic. It ensures that your family starts their day happy and ready to tackle whatever comes their way

"Eating pumpkin is good for the heart. The fiber, potassium, and vitamin C content in pumpkin all support heart health."

Ingredients.

· 2 Cups all purpose flour.

· 1/3 Cup sugar.

· 5 Teaspoons baking powder.

· 1 Teaspoon salt.

· 1 Teaspoon cinnamon.

· ¼ Teaspoon cloves.

· ¼ Teaspoon nutmeg.

· 1 ½ Cups of milk.

· 2 Eggs.

· ½ Cup oil.

· 1 Teaspoon vanilla.

· 1 Cup pumpkin puree.

· Maple syrup or honey for topping.


Procedure

· First, start by cooking a pumpkin chopped into cubes and making a puree so that you can have enough for 1 cup. You can make this a day earlier and keep it in the fridge overnight.

· In a large bowl, whisk together the flour, sugar baking powder, salt, cinnamon, clove and nutmeg. In another bowl, whisk together the milk, eggs, oil, vanilla and pumpkin.

· Pour the wet ingredients into the dry ingredients and stir until the batter comes together (a few lumps are okay). Let the batter rest for5-10 minutes.

· Heat your frying pan over middle heat. Pour the batter by ¼ cup scoops on the pan and cook 3-4 minutes or until large bubbles appear. Flip and cook 2-3 minutes on the other side. When ready to serve, top with maple syrup or honey.
